Let’s talk waffles. I am truly in love with Belgian waffles. Crispy exterior, pillowy interior, and always topped with strawberries and whipped cream. It is the perfect breakfast food. However, they are often made with yeast, which means they need to be made the night before you want them—and who has the time? Other Belgian waffle recipes call for whipping the egg whites separately, to develop the light and airy texture, but requires a stand mixer and more dishes—and who has the energy? Answer, not I. I just wanted waffles NOW (a la Veruca Salt.)
But fast doesn’t have to mean mediocre. While I am all for a box mix, waffles and pancakes are surprisingly easy to throw together on your own, and I wanted something with more caramel-y, vanilla-y notes than what a mix could offer. Enter malted milk powder—my secret ingredient.
What Is Malted Milk?
Malted milk is powdered evaporated milk combined with starch (typically wheat flour and dried barley powder). It adds rich caramel notes to an otherwise, fairly traditional, waffle recipe. The addition of vanilla extract further adds to this flavor. So, if you are short on time, have a hankering for waffles, and love vanilla, give this recipe a try. My favorite way to top these is with lots of butter and syrup, but they can also hold up to a mound of fruit and Nutella. No matter how you top them, I hope you enjoy!

In a large bowl, whisk together the flour, baking powder, baking soda, salt, sugar, and malted milk powder. Because the milk powder is yellow, I use it as my indicator to determine when everything is mixed together thoroughly.
In a separate bowl, combine the butter, eggs, milk, and vanilla. Mix well.
Add the wet ingredients all at once to the flour mixture. Stir until just combined. A few lumps are A-OK.
Dollop the mixture into the waffle iron and cook according to the manufacturer’s instructions.

I have a Presto ceramic flipside waffle maker. While I definitely have to do a little bit of scrubbing, and I don’t make nearly as many waffles as I would like, it has served me pretty well.
